三叫金鼠，一道古时名菜。需：刚出生的活幼鼠。食用者用筷子夹住活幼鼠，鼠会“吱儿”地叫一声，这是第一叫。收到调料里时，鼠又会“吱儿”一声，这是第二叫。当放入食用者口中时，一口咬开，鼠发出最后一“吱儿”，共三叫。食用者集齐三叫为最佳，而大部分人仅有一叫已为罕见。
