Schiacciata all’Uva, a Tuscan specialty made with the small red wine grapes known as canaiolo. It is a type of focaccia found only there and usually during the wine harvest in autumn.
But since you won't find those grapes here, you can make them with blueberries, as I did. Before and after #baking 👇

I'm totally stumped, not relatable to more known wines, dark, dry, murky, really good... needs cheese 🧀

Solo Una Notte by Il Vinco, minimal intervention wine made from 100% Canaiolo Nero. It has survived in an attic during the most scorching summer on record and still totally drinkable. Grapes are macerated just for one night (hence the name) and 6 month in inox. A joy! #rawwine #natwine

I had to find the tasting sheet, and shocker of shockers, it was actually Canaiolo. My bad. (In fairness to me, the grape was spelled incorrectly on the sheet, so a quick glance was misleading. I swear.)

I understand your concern but one of my favorite columns was when I wrote about why Colorino continues to exist. Reason? Because Italians like tradition. I wouldn't worry about Canaiolo, it actually still provides something to the blend.

2020 Avignonesi, Cantaloro, Toscana IGT Rosso, Tuscany, Italy.The 2020 Cantaloro by the famous Avignonesi winery, based in Montepulciano and known for their excellent Vino Nobile, is a tasty fruit forward blend of Sangiovese, Cabernet, Merlot and tiny amounts of Canaiolo and Syrah from their property in Cortona with a ripe and smooth full bodied palate. The nose is certainly Tuscan with Sangiovese leading the way with dark florals, crushed berries, sage, laurel and hints of wood toast that follows in the mouth along with blackberry, cherry, plum and currant fruit, as well as subtle loamy earthiness, licorice, cedar and tangy minty herbs. Value priced and generous, this is delicious stuff, especially with meat, hard cheeses, think pecorino, and or woodsy mushroom dishes. This wine usually is 50% Sangiovese, 24% Cabernet Sauvignon, 24% Merlot and the rest small lots of Syrah and local varietal Canaiolo, with the Sangiovese taking center stage. This Cantaloro Rosso, or baby Super Tuscan is a no brainer bargain, perfect for your midweek meals and a crowd pleaser for parties, plus it is a great way to start exploring the full Avignonesi lineup.

Still plenty of Canaiolo in Tuscany, but have you ever had a monovarietal version? There's a reason Sangiovese is No. 1. There's also still plenty of Colorino even though it brings nothing to the blend but dark color (hence the name), a boon when they allowed white grapes in CC but unnecessary now.

Wanted a good wine just to drink. Wanted something French, due to tariffs, French wines are in short supply. Settled for a super Tuscan, old school wine from the ancient Medici estate. Sangiovese, Cabernet and Canaiolo. Was told let it breath 2 hours & it will have sediment let the fun begin
