Skilled candy makers at Logan's Candies demonstrating how colourful pillow candies are made.

Pillow candies or candy canes are made from a mixture of sugar, water and corn syrup. The mixture is then pulled and stretched before it hardens.

Chocolate is lovely but vastly overused. There is a world of other sumptuous delights that get passed over because people think chocolate represents some kind of pinnacle of candymaking. If anything, chocolate became popular because it's impressively complex while still being mass-producable.

Genuinely, why would you replace milkfat (a nice thing) with CORN SYRUP. It is not good for you. If you let it dry out I think it would desiccate into /sand/.

(I use corn syrup in candymaking and that's about it.)

I was just assigned a case involving the Ferrero Rocher candymaking plant that is apparently here in Chicago? Definitely going to try to insist that I need a site visit to prepare the case, in hopes of some pocket-stuffing opportunities.
