What is horrifying is that if you look up any social media there's people who've monetized telling aspiring canners one weird trick, the government doesn't want you to know, and that trick is killing your family with botulism.

Canners! I just saw a video about this on IG. Do not use Ball pectin!!! People are using 2x, 4x, even 12x the pectin & it won’t set.
Note for canners and jam-makers: According to a detailed Reddit post, Ball has reformulated their pectin, and it's now much less effective: jams aren't setting. It's been cut with sucrose, and switched from "fruit pectin" to just "pectin".

Finally: commercial canning.

Higher pressure, hotter temps. Stuff you can't do at home.

But rebel canners think all of these rules are "the man trying to keep them down" so they can all kinds of things under poor conditions and the "proof" is they're not dead.

Ok so what if you want to can something that isn't acidic?

That's where pressure canners come in. The pressure allows you to can at much higher temperature - but it has limits.

You cannot for example pressure can at home whole cranberries.

Not just tools for building shit, but also tools like sewing machines. Pressure canners. Those little ramp thingies for working on your car. Carpet cleaners. Just all that sort of thing.
