That chicken stock has reduced down beautifully. It's creamy, packed with flavor, and perfect with a side of crusty garlic bread. Simple, satisfying dinner is just minutes away. Want to cook with more flavor and confidence? Visit CookWithChefBrian.com #cooking #homecooking #easydinner #chefsteps

there was a chefsteps video this month that gum flavor goes away because the sugar is gone. My kid chewed some gum and then rolled it in sugar and chewed it more and confirmed that worked. Fruit Stripe may be able to be reloaded.

Start a cold evening with a classic chicken and dumpling soup. Sautéing your carrots, onion, and celery in a warm Dutch oven builds the best base for a comforting meal. Want to cook with more flavor and confidence? Visit CookWithChefBrian.com #homecooking #comfortfood #souprecipe #chefsteps

It is tempting to reach for the ketchup, but these bites are meant to stand on their own. Taste one as-is before adding anything—the flavor is already there. Want to cook with more flavor and confidence? Visit CookWithChefBrian.com #cooking #homecooking #chefsteps #flavortips

This used to be the Chefsteps studio. Looks like it closed and is being replaced by a restaurant.

Guess that makes sense it was kind of quirky for it to be there, but sad I never saw anything since I only came on weekends.

Op-Ed: Food Media Needs a New Code of Ethics, One that Centers Labor
This article is the third in a series on kitchen labor, accountability, and reform. You can read the first on culinary education and the second on violence prevention here. “Is it just that you’re interested in dropping a bombshell story… because it’s going to drive engagement?” asked Chefsteps Editorial Director Sasha Fanon Marx. His question reflects how it feels as if abuse in restaurants is only worthy of being news when it happens in famous kitchens, such as New York Times journalist Julia Moskin’s article on the abuse allegations against chef René Redzepi at his restaurant Noma. And when that coverage does exist, it’s framed as a personality profile on a short-tempered genius or an art monster. What drives coverage of famous kitchens isn’t concern for the workers in them. “There’s this rubbernecking that people enjoy,” Marx added, “I don’t watch UFC, but I watch The Bear.” Suffering in kitchens has become socially-acceptable, bingeable entertainment, instead of a problem to fix. Abuse happens outside of Michelin-starred restaurants, too, but it goes undocumented because it’s not nearly as sensational. Accountability falls to food media because little public data or transparency infrastructure exists on restaurant labor conditions, even in cities like New...

More time consuming than I’d like, but it wasn’t the worst. Drying the mandolined sheets of potato before assembling was probably the most annoying part. www.chefsteps.com/activities/p...

Wow. Sous vide chicken (@ChefSteps guide) is so juicy it’s kinda weird. My @AnovaSousVide Xmas present to myself is totally worth it. :)

I mean...I hate to be That Person, but burning at the stake is kind of like fondue. A lot of effort goes into the presentation, and the food suffers as a result. Left to me, I'd do some kind of high heat preparation using a hibachi grill made out of bricks and imagination.

Btw, did a version of this w/ some Chefsteps guidance. Add 6(!) egg yolks here to the 2 eggs, slightly different spices to personal preference, definitely blind bake the crust to a nice golden. The whole bake is 350F. Much lighter than traditional, & custardy. www.verybestbaking.com/carnation/re...

Incidentally, I use this recipe to make "Egg bites" and it's basically the same thing. Half egg / half cottage cheese: www.chefsteps.com/activities/y.... But, you know, cooked sous vide until solid.
