The table is set! Here come the entrees: Malay fried chicken in front, a salad of Korean melon and saltcod in the middle, a spin on a Persian tahdig beyond that. A sampling of snacks before dinner Pickles to whet your appetite: a mix of warm, marinated olives, pickled caperberries, and pickled bullwhip kelp rings

A salad of Korean melon (like a mild canteloupe), salt cod, green brined peppercorns, parsley, kelp, and shallots in a vinaigrette of olive oil and wild rose vinegar My first attempt at a Persian tahdig (crispy rice) with some cardamom in the buttery, crispy layer and pandan and kelp in the main body of the rice Malay fried chicken (ayam goreng berempah), with the batter a mass of aromatic ginger, galangal, lemongrass, shallot, curry leaf, and a house-made curry powder, on both black-fleshed and white-fleshed chickens This dish was an invention, sort of a plot point, a "mermaid's purse." It's a soup dumpling in a rice paper wrapper with a little bit of squid and a dab of squid ink aioli in a pork broth center. It's served on a peaflower chickpea puree (basically blue hummus) with a green garlic chive herb oil and gooseneck barnacles. In the game story, it turns out to actually be the egg case of a Pathfinder sea devil (sahuagin in D&D terms).

This is black tea with peppercorn and mace, sweetened with cardamom rock candy. I read about this flavor combination in S.A. Chakraborty's novel The City of Brass and it has haunted me ever since. I simply had to make it happen. It was truly delicious. Turkish delight, the good stuff - this is the stuff Edmund Pevensie sold out humanity for. These are various flavors, in squares and cigars, alternately with nuts, rose petals, dried pomegranate, coconut, and some bits that we still haven't figured out. It's amazing. My favorite dessert to serve to a crowd with mixed food restrictions: Eaton mess. We set up a parfait bar and everybody picks whatever bits they want. These are tahini meringues, a vegan vanilla pudding, rose whipped cream, pistachios, pomegranate, ginger pickled asian pear, homemade pomegranate syrup, pralined pepitas, and a sprig of mint.
