I made the national dish, Pepperpot, with a side of Fungee (made of cornmeal & okra). It’s a hearty, spicy, tomato-based beef & ham stew with squash, yam, eggplant, spinach, & black-eyed peas.

It's our version of polenta,
but with more seasoning,

I love the Netflix series High On The Hog and how it traces the histories of Black American cuisine - and there are so many similarities in the histories of Caribbean food, too!
