Sake Advent Calendar Day 13: Hachinohe shurai “jokuu” futsushu. This was a quality futsushu cup like yesterday. This Aomori brewery was founded in 1944 & features low-temp, long-term fermentation, & hand brewing. 😗🍶 It also uses yeast #10, developed by their brewery. Both futsu cups have been solid!

Sake Advent Calendar Day 12: Sasaiwai “Bamboo Celebration” futsushu. I wasn’t super fond of our futsushu cups last year, which weren’t as flavorful (or dry) as this. This cup takes advantage of a four-stage brewing process called “yodan jikomi” in which amazake is added. 🍶 Another unique Sasaiwai!

We keep mentioning is🤔, it refers to “normal sake” or table sake!

While most sake that you see outside of Japan are one of the three premium grades (Junmai, Ginjo, and Daiginjo), most sake in Japan and that locals drink are futsushu!

I'm a cheap date, I like junmai futsushu better. This is too smooth. I like pear and apple notes but this just gives clean rice.

the deeper i've gotten into sake over the years the less i like ginjos and daiginjos. not anti them but i like funkier stuff rather than just light and fruity. this futsushu is my favorite at the moment: www.truesake.com/products/kik...

Really good chilled, but if you like your umami then try and leave this sake out to warm up 😋

this sake really sort of cemented my thoughts on what tougai (ungraded) sake rice, i.e. rice that doesn't pass strict examination, can do and taste like in sake.

This is exceptional sake, and it's futsushu. Maybe the tokutei meisho-shu system is on borrowed time. Probably better for reducing waste.
