I'm choosing not to use a pan as a diffuser so hopefully that works out. I'm also so distrustful of glasstop stoves

Glasstop stove designer 1: "Hey, what if we made the controls on these highly sensitive to getting wet, so if your fingers are even slightly moist the buttons don't work?"
Glasstop stove designer 2: "Oh, oh, and if the very flat buttons in close proximity to the pans get wet, they beep at you!"

I hate my glasstop, which is better than the coils. I told my husband he either has to pay to install propane, or we get an induction when this one goes, because I cannot live this way the rest of my life.

Update on deboning a turkey:
Yeah, it’s not really that hard.
Make sure it’s fully defrosted.
Work on a surface with a liquid dam — baking sheet. I used my cold, glasstop range surface.
Use really sharp, flexible knives.
Let gravity help.
Wings are for stock, legs are for braising.
