'Ubatama' (烏羽玉), most famously produced by Kyōto's "Kameya Yoshinaga" (亀屋良長), is also named after the seeds of the hiōgi.

Hibiscus and cotton rosemallow may well conjure up images of languid summer days, but in Japan 'fuyō' (芙蓉) are used to indicate the onset of autumn. In the language of flowers they represent gentleness.

High ranking monks from Hiei-zan first passed on the secret method for making kankidan to Kameya Kiyonaga (亀屋清永). The store sells both seijō kankidan and buto (餢飳), a pasty (or helmet🤔) shaped sweet also brought over to Japan 1000 years ago.

The store's survival is credited to a small shrine called Takenobu-jinja (武信神社)

In the Edo period Kameya Yoshinaga (亀屋良長) fell on hard times and came close to shutting down.
But then a white-bearded man visited their shop...

It is said that the confectionery store 'Kameya Mutsu' (亀屋陸奥-founded in 1421) first created 'matsukaze' (松風) as a means to feed the besieged Ishiyama Hongan-ji (石山本願寺).
For 11 years the temple struggled against Oda Nobunaga's (織田信長 1534-82) battle for supremacy.
