this variation of knafeh is Knafa Arabiya/Ghazawiya which has nuts and spices instead of cheese, and is local to gaza. check it out :)

Oh also they sampled us something called Abu Knafa. Its a pastry thats flat about the size and depth of a pizza. Its served with a desert cheese on it and dyed and has simole syrup.
Its served warm and is like a warm stretchy cheesecake!
Its amazing and its not overly rich like cheesecake!
