Finished painting Perries knights yesterday. Tried to give them colors to resemble Polish nobility from Polish-Lithuanian Commonwealth forces, but I'm pretty sure I've taken a lot of artistic liberty there :)

Well that’s lovely. A new customer ordered two mixed cases of cider and perry a couple weeks ago. He just mailed to say he was amazed by the perries and has ordered three more cases. That’s a really nice affirmation of what we’re doing (and I needed that). ☺️

This weekend one of our very best perries will be featured at a cider masterclass at the Slow wine Fair in Bologna. Wish I could have gone, but friends will be presenting it. Just sent them too many slides and descriptions of the work we do conserving rare Perry pear varieties 🙂

A very very satisfying re-arrangement of the cider shop today. We are at a record 28 different single variety ciders!! In all we have 84 different ciders and perries just made by us, with another 35 made by guest producers.

Like many perries, this is best served at room temp. Those astringent tannins from Kirchensaller are rendered smooth with a little natural residual sorbitol and a wonderful tropical fruitiness. A little fatty cheese and wurst is nice too 😜

This is possibly one of the best perries I’ve ever made. The first still perry I made, and it’s drinking absolutely fantabulous now at three years old. The most wine-like perry I’ve made to date.
