I was torn on what I wanted. I thought about the Rofco just due to it being half the price, but I read that it doesn't heat as even as the others and the seal is faulty sometimes. The RM2020 is almost the same price as the Simply, but the Simply has all the bells and whistles.

My friend, I have a RackMaster RM2020. I did Dutch ovens for years before I grew my business enough to purchase a bread oven.
The loaf you see in the photo is 100% Durum Semolina, and is rising as intended.
