It's kinda funny that every single one of these is more or less made to appeal to the diehard roleplayers in GTA Online, when GTA6 won't even have a multiplayer component for god knows how long

People unfortunately still want that narrative: There's a huge amount of human roleplayers whose characters are either strongly sceptic or downright hostile towards the Church of Holy Light, even though there is no real in-world justification for that. It's a stand-in for RL-Church and their evils.
