Neighbors had really tried much Indian cuisine. So we made them a starter meal: chicken vindaloo, creamy black daal, saag paneer, fresh basmati rice. I hope they like it.

not to dip too much into this discourse but worth saying that the fresh ingredients for this saag paneer ran me about $26 (all of that fresh spinach is expensive). made six servings, so that comes to about $4.33 a serving.

Chicken saag! (I like using non-pureed spinach and whole chicken thighs. Yum. The key is to make a ton of ginger garlic paste in advance and freeze it in ice cube trays. Then you can have curry anytime without the annoying process or peeling or grating ginger.)
