This delicious old-fashioned recipe is a healthy meat free meal or a personal sized side dish. Ruby red tomatoes stuffed with a flavourful curried rice, then baked to perfection!

Ripe summer tomatoes filled with buttery herb crumbs, baked until tender, and served as part of a simple summer supper. In this edition of The Inner Kitchen, we're making Stuffed Provençal Tomatoes inspired by the quiet pleasure of seasonal cooking and making something good from what we already have on hand.
