i love delis and diners but it's hard to square them in economic models that don't benefit from a very specific american postwar framework where meat and local cost of living for labor is all very cheap. roman emperors had fewer menu options than what some long island greek diners offer
It's so weird that we traded delis for coffee shops entirely because no one knew how much a fancy coffee cost and so they could just charge whatever for it.
