A simple no-knead Sourdough Mie

A square-shaped loaf of bread on a purple cutting board Recipe: Yudane: 50g Glutinous Rice Flour 200g Whey, scald 20g Sugar Dough: 270g Yudane 425g KA AP flour 25g Whole Wheat flour 50g Butter 130g Whey, scalded & cooled 80g Sourdough starter Make yudane, combine with butter, and allow to cool Combine all ingredients; rest 30 minutes. Stretch & fold the goop; rest 30 minutes. Stretch and fold in bowl until it is cohesive enough to move to a work surface; keep doing stretch and folds on work surface until you start getting a satisfying surface tension (3-4 minutes). Rest 30 minutes. Standard stretch and fold in bowl. Bulk proof, 6-7 hours. Preshape, bench rest, and shape. Proof in covered tin 4-4.5 hours; bake at 400F X45 minutes. #sourdough

No eggs, so I threw in everything else. I present whey yudane sourdough discard buns.
Top view of buns, 4 sesame seeded and 3 unseeded, sitting on a cooling rack. Recipe: Yudane: 25g glutinous rice flour 100g whey, boiling 70g butter Dough: 275 KA AP flour 50g whole wheat flour 20g sugar 7g salt 3.5g instant yeast 70g sourdough starter (100% H20, fridge cold) 80g whey, room temp Combine glutinous rice flour and boiling whey until they form a jelly paste; mix in butter. Add the dough ingredients and mix 2-3 minutes in mixer on low until combined. Cover with proofing bag for 15 minutes. Mix on low (KA level 2) for 10 minutes, and KA level 3-4 for 2 minutes. Shape into ball and proof 1 hours, folding half way through. Refrigerate 2+ hours. Allow to warm 30 minutes, divide and shape into balls (85g). Proof 30 minutes, milk wash; preheat oven to 415F; proof another 30 and 2nd milk wash. Dunk for v.seeded. Bake at 375F X18 minutes.

I’m attempting to bake….matcha yudane shokupan pan de sal - wow that’s a mouthful.

So i made the LA Times’ shokupan recipe below today.

It’s involved, but it works at high altitude, so that’s a win.

I used whole mlik powder and water to make all of the milk, and used the whole yudane (it started at 406 grams and weighed 402 after cooking, and I just CAN’T do food waste) —
