Penthouse Comix doesn't really count as a full-on serious comics gig, unfortunately. And that was the kind of thing he mostly spent his brief time on this earth time on.

Do you mean the classic Defenders version? She's around, sorta. She's supposed to be confined to Valhalla after dying (again) in War of Realms but she has nevertheless been seen in background cameos since, so I think people just forgot or ignored it.

I love that he just casually tosses out a plot about Batman adopting a teenage delinquent, or Batman having married some random woman in the past who is now a bee-themed supervillain.

As for the original version of Alfred, before all of this stuff happened, I would recommend you read Shadow of the Bat #31, "The Battling Butler" by Alan Grant and Bret Blevins. An amazingly melancholy and yet heartwarming story of the original Alfred meeting the 90's Batman and Robin...

Alfred being brought back as "The Outsider" is also fascinating because when the Outsider was created as a mysterious new villain there was absolutely NO thought that this would somehow be a resurrected Alfred. That idea only happened later when demand for Alfred's return came up.
