Pantry Challenge Meal for One

Lentil Soup in July
I mostly followed the recipe from Serious Eats, but didn't have brown lentils or potatoes or chard (garden kale, ftw!). It's a pantry challenge, after all. 😉

This is a perfect soup. And it will freeze well for later.

Maybe I'm the only vegan with a freezerful of nuts & seeds bought w/ the intention of eating more nuts and seeds & ignored. 🤔

And so, I was prepared to make ginger-sriracha cashew cream over rigatoni & blackened garden veg w/ crispy pepitas.

I picked up oyster mushrooms from the last-chance stand at the market yesterday. Cooked up Nisha Vora's mushroom carnitas tacos. 🤤

Except for the fruit and mushrooms, everything was from the fridge or pantry.

Tteokbokki with fried tofu chunks (corn starch, salt & pepper), carrots & beans from the garden with a made up gochujang sauce.

This is what I've been saying!

Where have we privatized and gotten a better return on our investments? For-profit hospitals? Universities? Military contractors?

But sure, preK-12 education will be different. Fuh.
But why defund schools?

To curate failure — to say that public schools are broken and public school teachers are inept all in a push to privatize public schools. To dumb down the populace. To demonize a system that educates over 90% of kids in this state…

So #Skype is going dark in May. What other (free) app can I use to make (free) phonecalls to, you know, phones?

Skype has been my go-to for calling my elected officials from overseas for 20 years! 🤷🏻‍♀️
