I just throw in some bay leaf, garlic, and veggie scraps (I save onion, carrot, and celery ends in the freezer for the purpose). add some olive oil, pepper, and salt. then i pull the aromatics out when the beans are done. people argue when to put salt in. i say any time after soak before done

I wasn’t familiar with any Spanish beans & rice recipe, but I am familiar with Spanish cooking. I sautéed sausage & aromatics, added beans & broth, simmered for 40 minutes, added the rice & cooked for another 20 minutes. 2/2 #recipes this is close to what I made spainonafork.com/spanish-poor...

Pro-tip: sautee your aromatics before adding them to the mixture; helps make sure the onions and such get properly cooked through so they blend more nicely with the other ingredients.

Also wait until 2/3 through the cook to glaze it, so the glaze doesn't burn.

Confit would be a strong option too, if you get any more tomatoes from you neighbor. You wind up with a bunch of tomato-infused (and whatever herbs or other aromatics you put in there) oil to play with as a bonus.

Spent part of the day boiling some chickpeas for hummus. I've got a giant tub of dried chickpeas from 2020 I'm trying to go through (it's so much chickpea...)

But you don't have to use doubanjiang, you can just add dried chillies with the other aromatics for a more classic hongshao. Also, add boiled eggs and chunks of daikon or carrot. Eggs as early as possible. Serve with fresh coriander.
