A classic Καθαρή Δευτέρα dish, for the beginning of the Greek Orthodox Lent. Usually made with small pasta, hilopites on this occasion. Onions, garlic, bay leaves, cinnamon, all spice, sweet paprika, tomato purée, wine, add to the richness and depth.

Last week was a national holiday in Greece; Clean Monday, or Kathara Deftera, marks the end of the three-week Carnival or Apokries and signifies the start of Lent. Festivities included traditional songs and dances as well as kite flying, symbolizing the purification of the soul.

Clean Monday: I love the fact that Orthodox Lent begins with kite flying, rather than ashing. A "lifted high on a divine wind" kind of repentance, and invitation to choose life.
