Update on week 4 of the garum:

My husband has made me move it out of the garage because it has made the space smell like “old socks and putrid fish guts.” Which, to be fair, is 50% correct. The garum now lives on the back porch.

Another day another amphora. Today I'm putting handles on these Camulodunum 186a, Roman garum (fermented fish sauce) amphorae 🏺tomorrow they'll be inverted, go back on the wheel and have their hollow spikes added. Probably hollow to catch the sediment from the garum.

fish sauce / garum was the ancient Roman’s favorite ingredient so fish sauce in Italian food is actually entirely authentic
if I make bolognese it will always have gochujang and fish sauce
we usually add gochujang to tomato-based Italian pasta sauces - it’s perfect

Managed to find this when in Lisbon: a modern day garum, developed commercially with a team from Lisbon University as well as local restaurateurs. Garum was THE Roman condiment, used across all classes and cuisines. It's a fermented fish sauce, so intense you only need a few drops.

Okay this is cool: A garum-style fish sauce made from the "waste" from unagi processing. I'm a vegetarian, but I have no problems using this. (Especially since it is delicious.)
