I volunteer in church. Collections are contactless. Most people can't be bothered to fill in their Giftaid details, to allow the church to claim back tax. So I fill it in with my details. The church gets Giftaid and I deduct the donation from my annual tax return - we both win.

Maybe they don't earn enough to pay enough tax to cover it. If you giftaid something and you haven't paid enough tax to cover it, HMRC will come after you for the difference.

So long as it's a registered UK charity, you can add giftaid on a gofundme page (usually).
