Renate Künast, the former Minister of Agriculture of Germany gave the keynote address. At the opening of the fair, the board members of Slow Food Germany Rupert Ebner, Sabrina Buchholz, Jens Herion, and Ulrike Höller were also present.

Part of the fair's opening was a press tour. The federal state of Baden-Württemberg has its own stand, which Minister Hauk proudly presented. The former minister Künast is delighted with the pastrami sandwich that is offered to her at the Slow Food Chef Alliance's booth. Minister Hauk enjoys a glass of wine at Weingut Wörthmann's booth. Höri Bülle is an old, very flavorful onion variety. It's one of Slow Food's Presidia. "Presidia are living examples of Slow Food's philosophy in action. They are small-scale food productions that protect traditional and artisanal products that are at risk of disappearing. Presidia producers follow the principles of agroecology, respecting the soil, water, animal welfare, and biodiversity. They use time-honored methods and avoid the use of pesticides, antibiotics, preservatives, artificial additives, and dyes. The Presidium helps producers to be less isolated to overcome challenges and to access a fairer market. Presidia are not just about food; they are also about culture. They preserve agricultural landscapes and the wisdom and skills of local producers. They are virtuous examples of the local economy, providing jobs and supporting rural communities." Yacon root contains Inulin which is a nutritive sweetener. Yacon syrup is a natural product suitable for diabetics. Indiginous people in South America use Yacon since centuries. Who doesn't like fasta fresh from the Parmesan cheese wheel! Slow Food Fair - Market of Good Taste takes place every year in April. It's always well attended. Slow Food Convivium Southern Teutoburg Forest presents products of another Slow Food Presidio, Lippegans. The Lippegans is a goose from the Westfalian Lippe region. This breed of goose is robust and can be kept outdoors all year round. It's a rare breed and Slow Food supports farmers who support biodiversity of farm animals. Slow Food Germany certifies wines. The wineries must adhere to the Slow Food criteria of good, clean and fair, the wines have to be certified organic and are tested by panel of colleagues. A large number of wines can be tasted in the Vinothek. Two typical wines from Burgenland, Austria. Blaufränkisch is the most important red variety. Weingut Gratl presents two Blaufränkisch, one produced in steel tanks and the other matured in large oak barrels. The white wine is a Gemischter Satz. Several grape varieties grow together in the vienyard, are harvested together and fermented together.

Organic groceries from Italy. Slow Food Chef Alliance is the network of chefs who embody the values of Slow Food GOOD, CLEAN, FAIR. Each one is commited to respecting these principles. The members of the Chef Alliance use local and seasonal ingredients. They share the same philosophy: passing on culinary know-how, maintaining a strong connection to their region, and preserving traditional culinary craft. Slow Food Chef Alliance chef at work. A traditional dish, sauerbraten and spaetzle. Sauerbraten is traditional in southern and westen parts of Germany. It's mainly beef but in western regions horsemeat is traditional, however not often used nowadays. Spaetzle are a typical side dish in Baden-Württemberg.

There are a lot of excellent destilleries in Germany. Steinhäuser is one of them and former Minister Künast opted for a sip of quince spirit. Nonalcoholic and low alcohol beverages are in vogue. Minister Hauk and former Minister Künast taste Natur and Mohr's Obstperry Birne. These two nonalcoholic beverages produced by Franz von Fein are based on teas and fermented fruit juices. Excellent! A Slow Food Fair without bread? Not in Germay! There are more than 3200 types of bread in Germany. Bäckerei Veit presented a mall selection.
