To cure tuna, get yourself a nice hunk of sushi-grade tuna, salt it heavily on all sides, and let it hang out in the fridge on a rack for an hour or two. Then, wipe clean and plunge directly into a 50% rice vinegar/50% icewater bath, leave for 15 or 20 minutes. Dry, slice, serve.
