My simracing setup consists of :
- T150 with the rubber bits coming off
- Loadcell pedals on the floor against a Xbox console box to stop it from going fowards
- An Ikea Markus chair where I put the wheels into my old sneakers so it stops rolling backwards when I'm on the brakes :')

I have some doubt the loadcell can do what an encoder would do, especially when printing fast. Encoder can not only feel blockage but also adjust live the flow according to the filament variations. You could even compensate for all little extrusion variations due to mechanical aspects.

What a way to start the morning. My Prusa Mk4 gouged a brand new print sheet, right in the area I print my best-selling product where the first layer is the most visible surface. Fantastic.
I like the loadcell calibration 99% of the time. This is that other 1%.
