Plugins -> Manage and install plugins. Seriously, that is the killer app. If you can think it, there's probably a plugin for it. Esoteric reasons, always have a more updated version of GDAL/PDAL.

You can open the .laz files in QGIS to explore the points pretty easily, or write some pipeline scripts using PDAL (they have tutorials) to extract a DEM or DSM GeoTIFF. More complex applications might use the .laz or .tif as input to a machine learning model, e.g. github.com/aws-samples/...
