I changed how I was adding the library to pico_add_library, which is how the PicoSDK handles its own libraries, and now everything is happy. Time to test it out on a real library, not just my test project

A big part of the answer seems to be don't use the official docs.

`eric/release-prep-as400` - note this is a huge refactor of the build system to a much simpler cmake/picosdk which is open in PR #350 Please let me know if you have any issues in setting up the env.
