The crucial point is: physics is not finished. We don't know the final theory. There are plenty of big questions to which we don't have compelling answers. And many of these questions are quantum at their hearts.

Some answers lazy Sunday edition: for a black hole the quantum information that must be preserved includes its mass, charge, and angular momentum. Emitted photons and the BH jointly encode these properties and are in this sense correlated with one another. 🧪
