Note for canners and jam-makers: According to a detailed Reddit post, Ball has reformulated their pectin, and it's now much less effective: jams aren't setting. It's been cut with sucrose, and switched from "fruit pectin" to just "pectin".

Ball makes a RealFruit low/no sugar added pectin that I’ve used in the past that works great, although you’ll have to do the math on how much of it you’ll need. Sets very well, at least in my experience

Gummies without animal gelatin are available, yes (Dare REALFRUIT, for example, which may or may not be available outside of Canada), but it's not universal, merely a dietary/vegan option. Is this not the case in the US?

Screenshot of a recipe card for making low-sugar habanero pepper jelly. Recipe makes 6 x 8oz jars (1/2 pints). Bring the following to a rolling boil: 4C sweet peppers + 6 habaneros, 1/2C Apple cider vinegar, 1/2C Water, 1/4C Sugar with 4.5Tbsp Low-Sugar Pectin (I use Ball Realfruit). Once it's boiling good, add remaining 2 3/4C Sugar. Bring back to rolling boil. Boil 1 minute. Load jars leaving 1/4 in. head space. Process 10 minutes in canner. Double recipe ingredient amounts are on the far right side of the card will make ~12 8 oz jars.

FYI for #canners who make jam/jelly, apparently Ball has 'reformulated' their pectin this year and it sucks now (doesn't set). I don't use pectin, but I'd stick to one of the other brands for now.
