Had not made my Sinhagad style chicken rassa in a while.
Sigh, it's been 9 years since BJP forced Sinhagad to become vegetarian. So that chicken now just lives on in our memories.
It's heavy on onion, ginger, garlic, chillies, and dried coconut.

Sinhagad recipes are always quite simple cos the folks there have to cart up supplies to the top of the fort and also back and forth. So they extract the maximum flavors from minimal ingredients & steps.
The Sinhagad Onion bhajii are best for the same reason. They don't use water.

Then finely chopped ginger garlic chillies for 2 mins.
Then dried coconut until it's semi brown.
Then turmeric coriander powders.
Add chicken, brown outsides.
Add water, bring to boil.
Cilantro.
