Made a soupbase yesterday making a stock adding mirepoix. Then used an emersion blender to make it smooth. Gives the stock a creamy texture with the blended veggies

Used that today to make a chicken tortilla soup with big chunks of carrot, onion, celery, poblano, & potato garnished with cilantro
