Seriously – even if they DIDN'T have the best spices I would get everything there but it so happens that they ALSO have the best spices and everyone who works there is just delightful

Seriously – even if they DIDN'T have the best spices I would get everything there but it so happens that they ALSO have the best spices and everyone who works there is just delightful

So here they are after their rub, sitting still for a bit while the spices ingratiate themselves with the shanks' outsides. Hickory chips are now soaking. The rub: black pepper, white pepper, coarse-ground salt, coarse-ground allspice and ground allspice, parsley, thyme, paprika.
