I combine www.seriouseats.com/sous-vide-de... and www.seriouseats.com/sous-vide-tu.... Instead of leaving the skin on the turchetta, I crisp it separately like in the second recipe, so I can avoid deep frying the thing. I use the temp in the second recipe too.

Turchetta is great for breast meat, but what do you do with the dark meat?

May I suggest: turkey confit.

Got the turkey broken down. Doing the legs confit and the breast as a turchetta. One turkey had more breast meat so we used him for today. Other guys goes into the freezer. Also, stock.
