Kingdom Come: Deliverance 1 and 2 are pretty close to that ideal!
There's also a bunch of CRPGs that are more linear at the beginning, but open up later on - UnderRail, Wasteland, Divinity: Original Sin 1 and 2

my Underrail build was to carpet the floor with mines and snipe guys as they tried to cross the minefield. It was very funny

Underrail is sort of the same way, but unless you're crossbows or chem pistols, you're mostly trying to win on action economy, and as a solo game it's inherently more frustrating.

For me i think it was Stalker shadow of Chernobyl at first. I played that game before i was in my teens (i think), and i loved it even when it scared me and was hard.
Then it was Underrail. Not my first attempt at underrail but my 2nd or 3rd is where it clicked and i became enthralled by it.
