New app icon for Xcodes: www.xcodes.app
I forgot to check back on this, so sorry to bug you, but in case anyone else comes across the issue...
My issue was that the XCodes app has a 'Simulator.app' of it's own and that was causing an issue. I bailed on XCodes for now and installed XCode 27 manually.

Apple doesn't accept App Store submissions from beta Xcodes. We can only submit our OS 27 updates to the App Store after they release the Xcode...

Man the swift dev community is so awesome, people are making such useful things every day. I remember only a few years ago I had a customized script to download Xcode with aria2 for speed. Now we have @mattkiazyk@iosdev.space's Xcodes and I haven't had to think about it since. So fun

Mac 升上 15.1 後，想說順便開個 XCodes 更新一下 XCode，要重新認證 Apple 帳號時無法認證，重試後還是失敗，想說該不會遇到什麼 bug 吧？
就先把 XCodes 從 2.3.0 更新到 2.4.0，就能認證成功，XCode 16.1 也成功安裝
XCodes 2.4.0 的 release note 上寫說這版本多支援了 SRP Login，難道是本來不支援嗎？
查了之後發現背後的故事比想像的更有趣
