I'm going to use Reolink products for my example, because I installed several of their systems, but there's also Hikvision, Amcrest and a few other manufactures that offer Power-over-Ethernet (PoE) systems and have doorbell camera options. Reolink is probably the easiest to setup, imo.

UniFi Protect: Breaking Down 3rd Party Camera Support
Replaced 15 cameras today... Going from Amcrest to Ubiquiti (G5 Turrets). Soooo much more clear. But the camera display is currently outside of my scope. But it was super fun making faces at the camera during its final seconds, so I had to snap a pic lol

I’d buy them sooner than later considering the banning of foreign routers. Foreign cameras will probably happen eventually, and Dahua/Hikvision/Amcrest are great for the price.

Dahlia cameras with a frigate NVR (and a Reolink doorbell) is what I went with. If you have the patience to work through setting up a config I think it’s worth it (night vision on the dahuas>>>>>reolink).
If you want plug and play, I honestly would either do UniFi ($$$), Reolink ($) or amcrest

I know we have an Amcrest one but not sure about the operating system for it. I know it can trigger with motion. I'll see if I can find more info!

Hard to recommend one since most IOT is Internet of Shit.
Amcrest and Reolink seem to have at least 1 doorbell that isn't cloud-hosted, and they only have a cloud relay for push messaging.

I like self hosted solutions but one of my cameras that cost me $100 failed after one year and 2 months… it has a one year warranty. I’m really hoping Amcrest replaces it or at least gives me a new seal for it or something. I need a bunch more cameras and I’m second guessing getting more of them

Talking to Amcrest technical support is like talking to 7 year old who's just pissed their own pants.
They don't know what's going on or why their pants are warm and when you ask them why they didn't tell someone or try to use the bathroom and they just blankly stare and shrug.

I have an Amcrest doorbell which I can connect to remotely to see the live feed, but I don’t pay for any cloud storage. Instead I use a Synology NAS to store the doorbell feed as well as three Synology cameras looking at the alley behind the house. No off-site video storage. The data is mine.

Oof. Might be closing the barn door after the horse's out - But I do have a spare AMCREST IP4M-1051B camera I just use for keeping an eye on the Garage when I'm out of town.
Could send it to ya to put up in the shed, if you'd like. It's not weatherproof, but it'll do wired or wireless, and record.
