My own preferences are for Onyx or Arsagas, two roasters in Arkansas (Onyx's founder was trained by the Arsagas owners), or Pfefferkorn's in Maryland. All three buy beans directly from individual smallholders and pay fair prices.
I begin my days with 4 cups of very good coffee. There is no doubt any more that coffee is a health drink. The challenge is to find ethically produced coffee. There are coffee roasters who buy directly from the producers, who are assured of a fair price. I like Little Waves, but there are others.

For dissertation-writing purposes, they also got Arsagas to build a location off the main entrance. A couple of us used to sit there to write/ do data analysis on weekends

Oh, that's so awesome! I loved that there was always that little Arsagas inside to grab coffee from when I needed it.
