Carbonating it all will definitely help with intensity, I like that. Thinking about how to make it more interesting - have you thought about a little fresh ginger for some bite? Walk back the lemon juice a bit and try a little apple cider vinegar to add a different kind of acid for more layers?

I got the original recipe from a bartender up at Prusik in Leavenworth, WA, but he used seltzer instead of just carbonating the whole thing. I've made some other adjustments since as well.

I use my drinkmate, but it’s really just for carbonating water. You’d have to find or make syrups to add to the sparkling water.

Now it's going to be about 22¢ a Litre for carbonating the water, + flavoring, which makes it a bit cheaper than no-name pop from the store.
Pretty happy with it - especially being able to customize flavors. I love a combo of 80% Diet Coke and 20% diet Root Beer.

Drinkmate. I find it easier to use, and you're not limited to carbonating plain water. You can add bubbles to other drinks, too! They have recipes for cocktails and mocktails on their site. I want to try some of the apple cider-based recipes this fall. With great local cider they'll be delish.

next batch of ginger beer is currently carbonating! this time around I added a cup of dried hibiscus to the sugar syrup, then strained it out post-dissolving. thus far it's turned out a beautiful red color. will report back tomorrow with a taste test!

Three very short presses on the button and it is pressured up. I've been carbonating the atmosphere in my kitchen. "What do you mean the pressure release valve doesn't just stay open?" like I never really knew how a proper one worked because first one I bought was pretty much broken from day one.
Update: I have been spending way too much on CO2 because this thing's release vale has been stuck open like the whole time I've had it. Buy a mysoda instead. Might have to replace in 7 more months, but I didn't even realize it's not supposed to let all the carbon out after you press button lol.
