I have a Sichuan friend who always talks up their cuisine's spice level and numbing and ive been able to handle it fine. But Chongqing spice i think i reached my limit. Shit was painfully hot.

Prefer both to Japanese which emphasizes no seasoning but ingredients which im not a fan

Every version of a foreign cuisine I have sampled while traveling and living in Japan was executed at a level comparable to the cuisine’s country of origin. Japan has the best global cuisine and it’s not even close.

I agree with you 💯 I also think it’s reasonable to expect that if one chooses to open a restaurant serving a specific cuisine, one should at least be vaguely aware of that cuisine’s core ingredients & how they should taste in the finished dish
