Was chatting with a friend at a coffee shop last night and the subject of djinn/wild spirits/demons came up, and an Iranian guy who'd been interjecting into our conversations occasionally over the evening interjected again to say that djinn *are* demons, full stop, which isn't a tradition I'd heard

Wholly different. Demons are always bad, djinn are (like humans) both good or bad. While there's association of similar nature (made of fire rather than earth) and non-human attributes, they're separate categories - at least in South Asian telling.
