Oooo you have to try the Ethiopian version, Tej, too. They use a shrub called gesho in the process more or less the same way hops would be used in brewing beer. Same base honey wine flavor but with a load more layers and notes.

I started back on my homemade honey wine! This particular batch is gonna be an Ethiopian mead (tej). I stuck it in the closet and am gonna keep it for about 2 months to see if it’s cooperating. Might get a second batch of moonshine started next week!
