and fwiw the menu for his first resto in Chicago was curated by Brendan Sodikoff of Hogsalt, who’s very very very good at hospitality — they parted ways in 2019

this is what happens when you don’t have experts in charge (the Paris location has same issues)

Living in Chicago is reminding me of Knoxville in that it's dominated by uninteresting chain restaurants (I see no difference between Applebee's and, I dunno, the Hogsalt Group).

Hogsalt is not Michelin level but they execute extremely well

Au Cheval burgers was start, now Bavette's (French steak), Armitage Alehouse and Gilt Bar (gastropubs), Ciccio Mio (Italian) + others

they're always very hard to get in (unless you're nice to the hosts and whoa lookit that!)

one of our fav restaurant groups (Hogsalt) is trying to sell $3000 initial + $600/mo membership that gets you… nothing

it will get you “top priority” on the wait list but no guarantees, and it doesn’t go to your bill and doesn’t get you a % off or anything, just pay us to try to get you a table!

It appears that the Chicago-based restaurant group Hogsalt is about to start charging $3,000 for a premium membership, and fans aren't too happy about it.

Hogsalt restaurant group has more inexpensive options (ie $50 would buy a few meals at Small Cheval, which has locations in several neighborhoods) LEY tends to high price points

Au Cheval’s Flagship Restaurant Temporarily Closed For A ‘Refresh’ https://blockclubchicago.org/2025/05/06/au-chevals-flagship-restaurant-temporarily-closed-for-a-refresh/
FULTON MARKET — One of Chicago’s most iconic burger restaurants is closed for the next couple of weeks. Au Cheval, from Hogsalt Hospitality, announced on its website that it is temporarily closed for a refresh. “We look forward to welcoming you back late May,” the restaurant posted on its website this week. Brendan Sodikoff, Hogsalt CEO, told Block Club in an email Tuesday that the restaurant is getting some cosmetic changes including “painting, fixing tile and upholstery as needed.” The flagship location, at 800 W. Randolph St, features a cheeseburger that ranks among the best burgers in the nation, and is known for long wait times. Small Cheval, a casual spinoff of Au Cheval, still has locations open in Hyde Park, the Loop, Gold Coast, Wicker Park, Old Town, Fulton Market, Lincoln Square and Lincoln Park. * * * **Support Local News!** **Subscribe to Block Club Chicago, **an independent, 501(c)(3), journalist-run newsroom.
