Perec's novel La Disparation was the opposite - a lipogram. He wrote the whole thing without using the letter 'e'. Some critics when it was first published managed to not notice, & became very angry when they realised, accusing him of empty postmodernist posturing. I think, in fact, he's playing.

Standard oulipian constraints (lipogram, sestinas) are theoretically simple for the LLM to produce without effort. A creative and skilled user could probably find ways to introduce binding constraints elsewhere in the process
