Melon, koji, light hint of rice… and I mean, straight-up rice. Something like egg whites. Quite light after the Shiboritate Nama Genshu 2014, but very clean.

Kurosawa Namazake with Crispy Sour Cream and Onion Chicken. I mixed panko with pickle-flavored potato chips as a crust, and it goes nicely with the vibrant, umami flavored Namazake.

Just visited Reigen Fermentation in Berlin (Wedding).
They are in a former bowling alley. I could only shoot the brewery through a closed glass door.
Bought 2 bottles. One is a brew using genmai rice and the other is a namazake of their main sake.

Has anyone else tried this sake? Warning: it's super sour tasting despite being -18(!) on the Sake Value Meter/Nihonshudo thanks to having 3.2 Acidity!

Sake review. Unctuous, umami, powerful and interesting. Slightly bubbly upon opening. In an interesting style, worth trying, can accompany heavy food, fried things.

One sake that I really enjoyed comes to mind when talking about umami and sake. Daijiro Kimoto Junmai Ginjo Namazake.
