It turns out that making truly *good* panettone requires next level bread baking skills-a pretty long fermentation and a not-sour sourdough-the one used in this video is 80 years old!

I baked this sourdough panettone yesterday. This is my second time baking panettone which is considered along with baguettes to be the most challenging of breads to make especially for home bakers. I candied orange peels and used sultanas and dried tart cherries.

Thank you! I was nervous to try it too, but found that what I have already learned about baking gf sourdough was enough to get me through making panettone. I imagine the same applies to regular wheat panettone as well.

Oh, that’s gorgeous. Yeah I have never done panettone before. Been baking sourdough since the pandemic when I had time at home to fiddle and a need to do something new, but sourdough challah is as close as I’ve gotten (*which is not particularly close). I hope they’re tasty!

That’s not much! I was basing my calc on sourdough bakes which have higher moisture content. Astonishingly little (even in my baking textbooks) to go on. I see great panettone in your future!

Spent the last couple of days making pandoro: 3 refreshments of my levieto madre, making stage 1 dough (see previous post), followed by stages 2 and 3, gradually adding more flour, egg, sugar and butter. More info in alts.

Can anyone tell me why panettone is considered a pastry that can be given as a gift?

I bake some myself almost every year. Properly made with sourdough. And they taste great! But only on baking day. The very next day, they start to dry out and basically no longer taste good.
