Today on Cocktails with Alpen, a... rum sour I guess. It's certainly not a Daiquiri because of the lack of lime. I found that lemon and demerara syrup work very well with the new Probitas green label! Super tasty.

Today on Cocktails with Alpenglow, Dr. Barca's Fluffy Banana. It's a drink by Dr. Dane Barca of Smuggler's Cove and it's fantastic! It uses aged cachaça and I don't have any cachaça on hand (a situation I should remedy), so I made a variation with Probitas and another with an agricole blanc.

A Very Good Mai Tai (makes 2)
2oz Probitas light rum
2oz Denizen Merchant Reserve 8 Year dark rum
1oz Dry Curaçao
1.5oz Lime Juice
.5oz Almond Orgeat
1oz Simple Syrup or Agave (or .5oz Mai Tai rich syrup)
Mint
Shake all liquid ingredients with ice and serve over crushed ice. Garnish with mint.
2oz Probitas light rum
