Tasted today:

'22 Habit Coquelicot Cabernet - The anti-Napa Cab. Full of barely cassis red fruit, plenty of jalapeño pyrazines and just enough tannin to hold it together in a glou-glou way. I love it, but your expectations need to set appropriately.

Tasted today:

'20 Bernard Baudry Clos Guillot - Full of pyrazines, soft tannin, earthy/funky reduction, purple & dark red fruit + ample acidity. You can make a Vin de garde with this grape (Rougeard, Cheval Blanc) but I love it at it's freshest and most direct.

No there aren't hints of chocolate and graphite, Alan, there is no chocolate in the wine that's just the pyrazines and you've never eaten graphite

There are two types of wine bad and drinkable and it's up to you which is which 🫡

Tasted today:

'23 Blanchet Pouilly Fumé - Brisk and mineral, more about palate feel and structure then fruit. Tough to find any Sauvignon pyrazines here, which made it a hard wine to identify blind for me. A touch simple, but a well priced quaffer.

Using a spice blend of cumin seed, sea salt, toasted sesame, and black pepper corn, all freshly ground together creates a wonderful flavor to compliment the burger. Great pungency and the pyrazines create a nice toasty flavor you want.

5️⃣ 👃 Aroma and flavor, however, did differ slightly.
EVOO generated more terpenes (fresh, fruity notes), while pomace oil produced more pyrazines, linked to roasted or slightly burnt aromas.
