I also fell in love with the Mexican spirit, sotol, at Indígenia! It's an elegant and earthy spirit made from the evergreen shrub, dasylirion, native to Chiuhaha, MX.

I would highly recommend all spirit connoisseurs to sample sotol this weekend. I was a big fan of the distillery, sol2noches <3

I don't remember if i shared this one from back in february but it's Sitala brewing (bathing?) in sotol.

Nothing like a good rattlesnake to make people forget the bunny again.

The sugar-rich core of the plant can be harvested & fermented to an alcoholic drink called 'sotol', similar to how agave is used to make tequila.

As the leaves of the sotol fall, they form a mulch that protects the roots from the sun, reducing soil evaporation & creating homes for desert bugs.

The common sotol, also called "desert spoon" for the spoon-shaped leaves, is 'dioecious'. meaning each plant produces either white, pollen-heavy male blooms or purple-pink to brown female flowers.

Although these look like Yuccas they’re Sotol, an unrelated plant seen at the Valley of Fires.🌿

“The alcoholic drink sotol, the northern cousin to tequila and mezcal, is made from the fermented inner cores of the plant. It is the state drink of the Mexican states of Chihuahua, Durango, & Coahuila.”
